This Rum comes from an artisanal distillery in eastern South Africa. It is made from the local nkomazi variety of sugar cane, which is neither treated, burned nor cultivated with fertilizers or pesticides. Harvesting is done by hand throughout the year. Fermentation lasts 7-8 days with selected yeasts, followed by natural fermentation for up to 21 days. Distillation takes place in a still, with batch distillation followed by blending. The distillery ages the product in different types of casks (bourbon, South African whisky, wine). After two years' ageing in a cask containing South African wine, this eau-de-vie was matured for an equivalent length of time in a second-fill bourbon cask.
