This rum has been produced in Vietnam, from a local variety of sugarcane harvested by hand in Quang Nam province. The distillery, founded in 2018 near Hoi An, is inspired by the rum-making techniques of the French West Indies while taking a sustainable approach. The production process is meticulous, from the manual harvesting of endemic cane to obtain concentrated juice, to natural fermentation, the use of copper stills and aging in cognac barrels. After distillation in an Armagnac-inspired copper column still, the rum is aged for 6 years in cognac casks.
