The assembly is carried out with great know-how. The cellar manager selects wines from 3 remarkable years based on their expression, and complements them with a proportion of Chardonnay from a decades-old solera, to achieve perfect harmony.

Larmandier-Bernier Vieille Vigne du Levant comes from an exceptional plot in a place called “Bourron du Levant” facing south-east. The vines are between 56 and over 80 years old. The deep roots and the diversity of the old vines contribute to the complexity of the wine. They are, like all the vineyards, cultivated naturally to obtain the perfect maturity.
Assemblage 2015 is produced exclusively from first press, from 8 great terroirs of Pinot Noir (60%) and Chardonnay (40%), 20% of which are vinified in small old oak barrels. Eight years of aging in the cellar, including 12 months minimum of storage after disgorging, allow it to develop a feeling of gluttony and concentration served by a persistent saline freshness.
Jacques Prieur Clos de la Féguine Monopole 1er Cru comes from a very steep plot of 0.27 hectares facing south. Thin, light brown, light soil of a loamy and clay-limestone nature.
Jacques Prieur Meursault Perrières 1er Cru comes from a 0.28 hectare plot with very thin (15-20 cm) sloping soil, facing east. Very calcareous basement. Limestone sheets. Lots of stones = stony ground.
Volnay Clos des Santenots 1er Cru is a 1.19 hectare plot, a monopoly of Domaine Jacques Prieur. This unique terroir is located in the heart of the Santenots du Milieu, on brown soil, rich in manganese, resting on hard limestone, rounded like pierced stones.
Bollinger R.D. means Recently Disgorged because this cuvée is marketed a few months after its disgorgement and this despite years of aging. It is a blend of 70% Pinot Noir and 30% Chardonnay from 14 terroirs, including 91% Grands Crus and 9% Premiers Crus.
