Established in 1860 by Edmond de Ayala, a Spanish nobleman, in Aÿ-Champagne, a village famous for its champagne production, the house quickly distinguished itself by its dedication to producing champagnes of exceptional quality, blending artisanal traditions with innovation. Ayala champagnes are primarily made from grapes sourced from the region's Grand Cru vineyards, with a particular focus on Chardonnay, Pinot Noir, and Pinot Meunier. The house employs meticulous winemaking techniques, including fermentation in stainless steel tanks and extended aging on lees, which contribute to the complexity and finesse of its champagnes. Nicolas Maillart Franc de Pied 2019 is a single plot Cuvée (Les Coupes), single grape variety (100% Pinot Noir) and limited to less than 4000 bottles per vintage. The peculiarity of this Champagne is that it is made from "free-root" vines, that is to say without American rootstock as was the Champagne vineyard before the phylloxera crisis.
Franck Bonville Pur Avize 2016 is a Champagne from 3 plots: Les Avats, Les Maladries and Les Chapelles. These lieux-dits, representative of the Avize terroir, are located in the heart of the village, a few dozen meters from the Maison Frank Bonville.
Solessence Nature is the prolonged aging of the Solessence cuvée and without dosage. Time has refined the work, the wine is expressed in its natural balance. Production limited to around 3,500 bottles per year.
Deutz Blanc de Blancs Millésimé is a perfectly crafted cuvée with a nose of remarkable finesse and minerality. Chardonnay brings notes of verbena, ripe white fruit and dried white flowers to the palate.
Bruno Paillard Première Cuvée is a selection of first press exclusively from more than 30 the noblest terroirs of Champagne. A large proportion of reserve wines (25 vintages since 1985) are incorporated into the blend.
Pierre Péters Grande Réserve is a blend of four parcels of the finest Côte des Blancs wines from the Domaine (Le Mesnil, Avize, Cramant, Oger), to which is added around 20% of the best Reserve Perpetual vats.
