Founded in 1946 in Chavot‑Courcourt (Marne), Champagne Chavost is rooted in solidarity, love of the land, and authenticity . Under oenologist Fabian Daviaux, the estate is now certified organic (5 ha since 2023) and produces Brut Nature cuvées with no added sulfites. Using spontaneous fermentations and no filtration, these wines perfectly express the clay‑limestone terroir with pure fruit, minerality, and finesse . Nicolas Maillart Platine is a Cuvée made mainly from Pinot Noir, Chardonnay and Meunier from the Villers Allerand 1er Cru, Ecueil 1er Cru and Bouzey Grand Cru terroirs. The reserve wines (30 to 40%), aged in barrels, give this Cuvée its harmony and consistency.
