Louis Roederer Vintage 2016 is a tribute to the Pinot Noir of La Montagne de Reims (68% Pinot Noir, 32% Chardonnay). Harvested between September 15 and October 1, 33% of the wine is aged in French oak barrels, with minimal malolactic fermentation (around 5%) and a dosage of 7 g/l.
The vintage, marked by contrasting weather conditions (cool spring followed by a scorching summer), produces a wine with expressive notes: red fruit jam (Burlat cherry, redcurrant), candied citrus, and toasted hazelnut, developing into mineral tones (warm chalk, sunny limestone).
On the palate, it is rich and creamy, with silky bubbles, a full texture, and a long, saline, spicy finish.

Bruno Paillard Blanc de Blancs Grand Cru is made from Chardonnay Première presse, coming exclusively from grands crus from the heart of the famous “Côte des Blancs”. A large proportion of reserve wines (25 vintages since 1985) are incorporated into the blend.
Bruno Paillard Dosage Zéro is a selection from the first pressing of the three grape varieties and for the majority vinified in small oak barrels. The “reserve wines” account for half of the blend. The aging is extended well beyond the legal duration: 3 to 4 years in bottle "on the lees" followed by 6 months of rest after disgorging. Dosage: zero.
