Bruno Paillard Dosage Zéro is a selection from the first pressing of the three grape varieties and for the majority vinified in small oak barrels. The “reserve wines” account for half of the blend. The aging is extended well beyond the legal duration: 3 to 4 years in bottle "on the lees" followed by 6 months of rest after disgorging. Dosage: zero.
Larmandier-Berinier Rosé de Saignée is made only with Pinots Noirs from Vertus using the “Saignée” technique of letting the grapes macerate for a certain time until the desired pink color is obtained, but also more generous aromas.
