The House of Ayala is a prestigious champagne house located in the Champagne region of France. Founded in 1860, it is renowned for its commitment to the quality and elegance of its champagnes. Established in 1860 by Edmond de Ayala, a Spanish nobleman, in Aÿ-Champagne, a village famous for its champagne production, the house quickly distinguished itself by its dedication to producing champagnes of exceptional quality, blending artisanal traditions with innovation. Ayala champagnes are primarily made from grapes sourced from the region's Grand Cru vineyards, with a particular focus on Chardonnay, Pinot Noir, and Pinot Meunier. The house employs meticulous winemaking techniques, including fermentation in stainless steel tanks and extended aging on lees, which contribute to the complexity and finesse of its champagnes. Ayala is also known for its low dosage practices, meaning its champagnes generally have a lower sugar content, enhancing their freshness and minerality.
“Les Ribauds” plot reveals an atypical expression of Pinot Meunier: richness and roundness with, in particular, notes of quite ripe red fruits. The silts of the soil soften the clays: we find a certain freshness as well as spicy notes.
Krug Grande Cuvée 172ème Édition is a blend of 146 wines from 11 different years, with the youngest from 2016 and the oldest from 1998. After around seven years of maturation in the cellars, it acquires its unique character and elegance. Over 20 years of painstaking effort have gone into creating this edition of Krug Grande Cuvée.
Agrapart Terroirs is a Blanc de Blancs Champagne from the Grands Crus terroirs of Avize, Oger, Cramant and Oiry. The cuvée is non-vintage because it is blended with grand cru reserve wines, half aged in demi-muids.
Grand Cellier D'Or 2017 is a Champagne of remarkable finesse and precision with a blend of 80% Chardonnay and 20% Pinot Noir from 50 year old Premier Cru. The wines spend 10 months aging in 228L oak pieces to bring power and complexity.
Deutz Brut Classic is a harmonious blend of three Champagne grape varieties: Chardonnay, Pinot Noir and Pinot Meunier. A golden color associated with bubbles of great finesse. A very expressive cuvée, symbol of the expertise of Maison Deutz, with floral notes and aromas of toast.
Bruno Paillard Rosé Première Cuvée is created according to the rule of assembling Pinot Noir in its two forms:

Pierre Péters Grande Réserve is a blend of four parcels of the finest Côte des Blancs wines from the Domaine (Le Mesnil, Avize, Cramant, Oger), to which is added around 20% of the best Reserve Perpetual vats.
PN AYC18 is the 4th edition of a new range created by Maison Bollinger to honor the Pinot Noir grape. This Champagne is made 100% with Pinot Noir coming mainly from the village of Ay (AYC) on the basis of the 2018 harvest. The blend is completed by reserve wines dating back to 2009
