The Dalmore is a legendary Highland distillery, founded in 1839 by Sir Alexander Matheson on the Cromarty Firth at Black Isle (“big meadow” in Gaelic) . Now owned by Whyte & Mackay, it’s famous for multi-stage maturation—first in bourbon casks, then finished in rare sherry casks hand-selected by Richard Paterson and Gregg Glass . The iconic 12‑point Royal Stag emblem reflects its heritage and potency. The Publican barley used for this edition was grown in field 43ac and harvested at the end of August 2009. It was dried and stored on the farm before being malted at Alloa in 2010. The single malt comes from twenty-seven first-fill bourbon casks, distilled in December 2011. It was aged in the upper part of the cellar until 2024, before being bottled.
