Nicolas Maillart Platine is a Cuvée made mainly from Pinot Noir, Chardonnay and Meunier from the Villers Allerand 1er Cru, Ecueil 1er Cru and Bouzey Grand Cru terroirs. The reserve wines (30 to 40%), aged in barrels, give this Cuvée its harmony and consistency.
Bruno Paillard Blanc de Noirs is made entirely from the first pressing of pinot noir grapes from four grand crus: Verzenay, Mailly, Verzy and Bouzy. Three of them have a predominantly northern orientation. These ancient limestone soils bring together the elegance and depth of the characteristics of Pinot Noir.
Franck Bonville Brut Grand Cru Blanc de Blancs is an emblematic wine, a standard of the style of the Bonville house, finesse, elegance and smoothness thanks in particular to the choice of reserve wines.
Bruno Paillard Première Cuvée is a selection of first press exclusively from more than 30 the noblest terroirs of Champagne. A large proportion of reserve wines (25 vintages since 1985) are incorporated into the blend.
Nicolas Maillart Rosé Grand Cru is a very technical cuvée that begins in the vineyard with the selection of plots of old Pinot Noir from the best terroirs of Bouzy. The estate uses the "saignee" method, i.e. the Pinot Noir grapes will macerate for a few hours to obtain the rosé color. Then, the Chardonnay is blended with the Pinot Noir to give freshness to this Cuvée.
Bollinger Special Cuvée is a Champagne mostly blended with reserve wines, part of which has been kept in magnums for 5 to 15 years. The maturation time is therefore much higher than the appellation standards.
Egly-Ouriet Brut Grand Cru is considered as one of the best non-vintage Champagne. A blend of Pinot Noir, Chardonnay from Ambonnay and Bouzy magnified by long aging, this Cuvée reveals roundness, delicacy and vinosity.
