Daftmill

Daftmill is a family-run Lowland distillery located in a converted watermill near Cupar, Fife (Scotland). Established in 2005 by brothers Francis and Ian Cuthbert, it grows its own barley on-site and uses pure artesian well water for its single malt . With tiny annual output (~20,000 L, ~100 casks), distillation aligns with farming seasons (spring & autumn)  . The Publican barley used for this edition was grown in field 43ac and harvested at the end of August 2009. It was dried and stored on the farm before being malted at Alloa in 2010. The single malt comes from twenty-seven first-fill bourbon casks, distilled in December 2011. It was aged in the upper part of the cellar until 2024, before being bottled.
