Zacapa 23 is made using an aging process derived from the “sistema solera” technique, during which rums of different ages and profiles are blended and then aged in a succession of barrels. The renowned Caroni distillery ceased operations in 2002, putting an end to the production of "heavy" rums in Trinidad.
