Copper color tending towards mahogany, golden reflections. Viscosity underlined by persistent legs. A nose releasing delicate floral fragrances, aromas of dried fruits. Bollinger Special Cuvée is a Champagne mostly blended with reserve wines, part of which has been kept in magnums for 5 to 15 years. The maturation time is therefore much higher than the appellation standards.
A.E. Dor Vieille Reserve N ° 8 comes from the House's old Cognacs Grande Champagne stocks. Despite its high alcohol content, 47%, it does not provide any aggressiveness to the palate thanks to a very long aging in humid cellars causing slow evaporation. Remarkable finesse!
