Only the juice from the first pressing is used, and the wines are aged for an extended period of 3 to 4 years in the Millénaire Crayères.

1990 vintage: Bud break and flowering were very early and followed by a very hot and dry summer with some stormy rains at the end of August. The late season was also optimal and allowed the harvest of perfectly ripe grapes. Exceptional year!
