In 2011, Bache Gabrielsen cellar master decided to transfer it to one of the demi-johns living in the Paradise.

François Peyrot XO was produced and distilled at the family estate of Les Bergeronnettes, it is a Grande Champagne 1er cru cognac. It has aged for many years in French oak barrels in the "Paradis" cellars.
